Camp Aliyah at Amadeo

Survivor House Cup 2019

I finished my Bachelor's Degree in Computer Science last 2010 with a special set of people. We call ourselves the Survivors. A group of 16 friends who went through the four years of happy and hard times of college together and found a beautiful friendship with each other. We called ourselves Survivors because aside from most of us loving the US TV Series, we all survived college together!

Last May 25-26, 2019, 9 of us friends traveled to Amadeo, Cavite to celebrate a mini reunion just because we wanna be together and also to send off one of our friends, my Best Friend from College Ralph John. We had a series of games that we called the Survivor House Cup and we had an amazing time together laughing and playing and catching up with our lives.

Here are some pictures we took at Camp Aliyah where the games (and food) were held. It is a place secluded and hidden from the hustle and bustle of the city, deep in the heart of Amadeo, although it's just a few minute drive from Tagaytay City. We booked our overnight stay through AirBnB and the place was amazing and new! For groups of more than 10 people, this is a great place both for staycation and for activities since the front lawn is very spacious!

I asked them to prepare one game each for 8 players. Each one of us will be the game-master for each of the games that we prepared so that will exempt us a game each so when the scores are tabulated, it will be one game less for everyone. Some of the games are individual and some are by group, but all of it was filled with so much fun!

After a few more games, we decided that it was time for dinner. Some prepped up the dishes while a few of us ran for errands on the missing pieces that we need for our Korean BBQ night. Special thanks to Ate Lhot and Kathleen for their Samgyupsal stoves, we were able to grill delicious pork and beef cutlets complete with tasty Shabu-Shabu style soup.

The games started quite late because we had to do our initial preparations for dinner and also planning of the meals to be done right after the first half of the games. We had so much fun preparing the games and meals together as we all talk about memories and future plans for our group of friends.

We capped the night with our very last game at around 1 in the morning and we all said goodnight and finally hit the sack. The night was very peaceful and quiet, with just a hint of karaoke night on another house but it was not that much to displace our sleep.

When we got up, it was time for breakfast. The breakfast team prepared a heavy breakfast of rice and noodles with eggs and hotdogs. It was a riot as usual, but filled with laughs and stories. When it was all over, we watched Tiny Places on Netflix and prepared to leave. The awarding ceremony took place just before we left and I prepared a few certificates as remembrances for that amazing two days we shared together.

Congratulations to the winners! House Jayson took home the Third Place, House Mark got the Silver Award, and House Florence won the lot and took home the title of GRAND CHAMPION! Great job everybody, it was an amazing game!

All those times, we wish there were more of us Survivors present but they will always be with us even if they were not able to come. hoping for more adventures for us Survivors, for sure there will be more in the coming months and years!

Government vs. Governance

There is a place for efficiency in the government, and it does not solely depend on the leaders that facilitates the government processes, but it depends on every person governed. Governance is not provided not just by a certain group of officials because as society evolves, more actors and groups are now directly involved in the process of governance which are grouped into three legs, the government, the market, and the civic societies. (Carino, 2004) For a democracy to work as it is intended, power should not be confined in just a single person or a single group of people that are often the elites. Power should be distributed to every person in the society and it is up to the citizens to claim and practice that power for themselves.

Governance is a term not used to relate to government processes only in the past few decades. We equate both terms, government and governance through basic definitions that we can find. From the root word govern, which simply denotes power and control over a system or territory. But Carino differentiated them by pointing that the government is all about control, while governance is all about management. Through this, one can easily say that governance is better than government, but we must also know that government is a vital part of governance. Aside from the role of the government, there are two other actors that work with it for effective governance, markets and civil societies. The market or the private sector generates wealth for dispersal and a barrack of human resource and talent. Businesses that both supply goods and services to consumers and wages to human resources that they employ. Civil society on the other hand represents the public and raise voices of those who have none or don’t know how to use theirs. Together, these three must work together and use their abilities to cooperate which will then provide success not just to the system itself but to society at large.

Soup to Nuts (Center for Civic Education, 1977) is a very good cartoon that illustrates the advantage and disadvantage of having a government and the type of governance that a government employ. It shows that even if the market and civil society is independent from the government, they can still be affected by the kind of government it works at. In the filmstrip, the people on the city decided to hire a new despot that will oversee governing the city because the last government was elected by the people with a promise to be “out of people’s way” and gave all the control to the people themselves. It was chaos. This part of the filmstrip showed the importance of government not just in the distribution of resources, but also for maintaining order within the society. The people then decided to hire a new despot which made a huge turnaround for the better in the beginning but when the power shifted to just one person, too much control of not just the government but even control of the market through monopoly and control of society by imposing inhumane rules. This is also a good presentation that the government cannot just command or regulate its citizens, it can also mark them as adversaries to prevent alleged abuse(Weil, 2015).

“Membership in participation, but not participation for participation’s sake” simply denotes that for one to claim and exercise power as a citizen in democracy, one should not just abide by the law and follow and leave it as it is. Besides, the power of the citizen doesn’t just start and end every election day where we chose our leaders, it should live with us every single day. From as simple as being aware of the news to organizing thoughts and collectively sharing those ideas to several people, one can really make a difference through many.

Government vs. Governance In the end we can see that whether we have different branches of governance, everything must work together to compliment and coordinate the other, and who should oversee it? The people, society. By actively participating in the governance of the state. By having a voice and letting it resonate. On Eric Liu’s Ted talk, he presented the six sources of power, most important of these in a democracy is the last source, Numbers (Liu, 2014). Through numbers, power can be shared from person to person and collectively, we can make our small voices enough to make difference.

Flatterie at the Mall of Asia

Flatterie at the Mall of Asia

It was just a normal Sunday that weekend that passed but me and my cousin Judy decided to go to SM Mall of Asia with my best friend Rjay to register on the upcoming Runrio race happening this June 3rd. Me and my cousin will be running the 10K while Rjay will take part on the 21K half-marathon. We were supposed to grab some fastfood for dinner but we passed by this cute fancy place at the edge of the right wing, Flatterie.

The greeter walked towards us and led us to the high chairs at the center. It's just a tiny restaurant but it looks really posh I must say. I know, I should have taken shots of the interiors but we were just really hungry that time haha. So we scanned through their menu and basically they serve flatbreads (smaller versions of pizza), pasta, and chicken and rice dishes. Here are the goodies that we enjoyed.

Truffle Flatbread (Selfie - Php220, Groupie - Php320)

Available in two sizes, their flatbreads can be ordered as a selfie (for one) or groupie (two to three). As a sucker for truffle, I really did enjoy this flattie. Unlike other pizzas where you can see big chunks of toppings, the truffle has been creamed together with other ingredients and placed neatly under a blanket of cheese. the taste of the truffle is very extravagant but not overpowering. Anyone cooking with truffle must be very careful because it has the tendency to be too strong for any dish, but this one, perfection. And to tell you about the crust, it is more on the gummy area and not flaky.

Carbonara (Selfie - Php 200, Groupie - Php 300)

We had the selfie sized carbonara. I must say that they do know what carbonara is. Because mostly here in the Philippines, they think that carbonara should be flooded with white sauce. That is actually alfredo, not cabronara. Carbonara is tossed in eggs and cheese and definitely not saucy, just like this one. They made the pasta with perfect firmness (to my liking) and tossed it over rich cream and egg yolks. Topped with savory bacon and delicious Parmesan, this may be a hint of heaven for me.

Rosemary Chicken (Php 290)

This dish is a vacation from the first two we had because this is a definition of comfort food. Roast chicken thigh and a fillet breaded and deep fried all over a bed of rice pilaf. Topped with onion rings  and a cute little fried egg, it's our usual chicken and rice dish. Nothing glorious to be honest but not until you taste the gravy. Their gravy probably was made of roast beef drippings, not really sure except for one thing, it was phenomenal gravy.

S'mores Flatbread (Php 270)

Can any meal be complete without something sweet to cap it? Well not for us! It may be another flatbread but this one is a delight to your sweet tooth. The bread on this one is not as toasted as their savory flatbreads, then topped with a special chocolate sauce, drizzled with chocolate syrup, and yes, I swear there's also a raining of cocoa powder which gave it a different kick. Toasted marshmallows like boulders on graham sands just fixed the whole thing into a dessert dream. I suggest that for every bite, make sure all the components will be on it so you can enjoy the magical swirl of flavors.

Even before we got down from our high-chairs, we told each other that we'll be coming back to try other dishes at Flatterie. We may be easy to please but I'm sure we really did enjoy the food and not just because we were too hungry. So to pizza lovers, pasta lovers, and foodies like me, come and try flatterie, for it will surely flatter your senses.

Bag of Beans - Athena

Bag of Beans Café and Restaurant - Athena

Every time we think about Tagaytay and where to dine, most of us think about 'Bag of Beans'. They're known for serving good food and enjoying it in the cozy and cool climate of the mountains. But nowadays, thinking about bag of Beans is not enough for they do have a number of branches, all in just one beautiful city.

As for me and my cousin Judy, we tried dining on all of their branches (including one of their former branches located near the Olivares Rotunda) but what captures our senses, not just our taste buds but particularly our sight is their Athena branch. Nestled at the busy part of Aguinaldo Highway, bag of Beans - Athena branch boats of it's homey but very chic interiors with of course, a spectacular view of the Taal Lake at the back.

A bit of a challenge on this branch is it's location which is on a steeper ground from the highway entrance. Challenge to go down to the parking lot and a challenge for your car to rise up back on the road on your way out. Well good things are never easy to get to right?

Oh those glass chairs (So Scary to sit at for overweight guys like me HAHA)

The interior is amazing, well speaking for my own taste that is. Vigan tiles, whitewashed furniture, low hanging chandeliers, oh it feels like I'm on a home magazine shoot! Those dark stained wood and whitewashed walls are just a delight for my eyes. I know I'm on a restaurant but I can use a nice lounge chair and stray for a whole day here.

Seats are also available on the second level.

Okay so let's move on the food we tried. It was breakfast and if I'm not mistaken, me and my cousin Judy were the second group of customers for that day. They open at 7 in the morning so it was quite chilly that time even on a summer's day. So we scanned through their menu and decided on what we will be enjoying for that morning.

Tanigue Steak (Php 380)

An inch thick tanigue cutlet flame grilled to it's perfect finish. This is exactly how I like my fish is cooked. Other love it deep fried, pan fried, or grilled until it's golden brown and toasted but I personally think that it loses a lot of it's flavor that way. I want it juicy and tender though without that fishy smell or taste, just the perfect amount of salty and lemon to bring out it's natural delicious taste. Oh and yes, their veggies are tossed over butter and not margarine, I'm very particular with that HAHA. Served with mashed potatoes and their homestyle gravy.

Longanisa - a Filipino Favorite (Php 230)

Filipino-Spanish style sausages similar to the chorizo, longanisa is a staple on most Pinoy breakfast tables. it's sweet and salty fusion is a favorite for most of us but surprisingly, not for my Ate Judy. I was quite shocked that she ordered this from the menu because she's not very into this but I guess she tries stuff which makes me happy!

Of course I tried it too. I did like the taste but the texture is a bit too fine for me. I like the longanisa which is a little bit chunky wherein you can feel the difference between lean pork and pig's fat right inside your palette. Will I order it the next time, maybe I'll try some other of their Filipino favorites.

Chocolate Chip Pancake (Php 205)

Just like any other dinner that me and my cousin share, we never order just a plate for each of us, there's always a third one to share HAHA. This time, we got their choco chip pancakes which was good. It's not too fluffy but not too creamy. Served with maple syrup, it was a delight but we weren't able to finish it because we were too full from our entrees.

After breakfast, we spent a little more time and found out it was drizzling outside but we did enjoy nature's greeting that morning. They also have pasalubongs and take-homes like pastries and spreads that you can enjoy at your own home or give them as gifts to your loved ones.

Over-all, me and my sister had an amazing time at bag of Beans - Athena. It was probably our third visit on that branch but I have to say every single time we dine there is just remarkable. The place is perfect not just for family and friends like me and my cousin but also for large groups and barkadas and of course, a romantic place for you and your special someone.

Pizza Volante at Wright Park

Pizza Volate - Wright Park, Baguio City

People associate Baguio City with it's year-round cooler temperature than any metro in the country. But for me honestly, Baguio City is all about food. With it's mild and cool climate, perfect for growing the freshest produce, Baguio City boasts of its high grade greens and veggies which makes every single food item a magical ingredient.

We were supposed to go to the Ilocos region in celebration of my cousin Judy's birthday, but we decided to cut our trip short and visit the Shrine of Our Lady of Manaoag in Pangasinan. After we heard mass and said our prayers to Mama Mary, we decided to go up the Cordilleras and have lunch at Baguio City. Baguio City is nestled atop the province of Benguet, in the Cordillera mountain range, the reason why it has way better temperatures during these hot months, also the reason it is dubbed at the Summer Capital of the Philippines.

Located roughly 246 kilometers north of Manila, we reached Baguio City in search of Lunch. Yes! We drove all the way up (5,000 ft altitude) just for a good and hearty lunch. Quickly, we have decided to have it at Pizza Volante. Around 9 years ago, me and my brother Wilson went up to Baguio and have tried Pizza Volante on their Session Road branch so I suggested we try their food the their place just in front of the famous Wright Park, near the Mansion.

The place is cute with a log-cabin inspired store with quite a few outdoor seats. We opted to be seated outside to enjoy the beautiful cool afternoon that it was. It was around 2 in the afternoon but the temperature is a perfect 24 degrees. Our kind server asked us for our orders and just as usual, we ordered all the same thing. But aside from our steaks, we also got a plate of pasta and a pan pizza for sharing.

Note: Since the restaurant is located just across Wright Park, where horseback riding is an popular activity, we recommend taking the indoor tables.

But since the stench that time was not that strong, we seated comfortably on the outdoor seats, chatting right after we said our orders. We all ordered Porterhouse Steaks - all three of them had theirs Medium Well and mine, my usual Medium Rare. Let me run you through the dishes we had that lunch time.

Pasta Putanesca (Php 225.00)

Spaghetti Pasta topped with sauce made of Tomatoes, anchovies, black and green olives, and topped with parmesan cheese. Since this is a pasta dish, let me start with the noodles. It was a borderline of good and soggy. The consistency was passable but I have to be honest, it does bother me every time I chew on it.

But the sauce was another story. It was seasoned well, just perfectly to bring out the real taste of its ingredients. I also have to commend the amount of time that they used to cooked the sauce because the tomatoes and olives are not too chunky (I hate sauces with undercooked veggies - it's a sauce ok, not a salad). So overall, I think this was a good dish, but yes, the mid-soggy noodles were a bit bothering to me.

Porterhouse Steak - 250 g (Php 229.00)

So this was our main course, four plates of this one, each for one of us! This was a little disappointing for me. This one was served cold. I mean, not the cold cold from the fridge of course, but way colder than how you should serve a newly cooked meal. For the price of 229 pesos, which was super cheap for a 250 g steak to be honest, it was okay. But still, even for a low price, they should have done better.

Served with gravy, corsican rice, and mixed vegetables, I thought I was the only one with the cold steak since I ordered Medium Rare, but even for my friends who ordered it Medium Well, they did have the same findings. At first I thought it was the weather that it made it so cold so fast, but I don;t think it is since as our kind server handed us the plates, we started to dig in.

As per the menu, this were grilled over Lava rocks, so maybe I thought this is how it ends up when you cook them in that way. But I'm sure they can do so much better than this one. I think they should cut the steak proportionally too as to distribute the heat evenly , because my steak in particular, has a big flap of meat over the other so when I opened the fold, it was too rare on the inner parts where-in I can still see the shiny silvery things aside from the expected bloody finish.

10 inch Half Marengo - Half Kenny George (Php 269.00)

From a disappointing dish, let's move on to our last dish that did made me smile. Really, their pizza is their forte. From the perfect texture of their cheese (not just because of a high grade cheese but because of the perfect amount of time to melt it) to its amazing dough, this is a delight! I mean, just take a look at that photo above. You can see how perfectly kneaded the flatbread is on its crust. Not too thin but not too thick. And unlike the steak, this was served on a better temperature (still not perfectly hot though to tell you the truth).

Note: You can order your pizzas half-and-half (half of a flavor and half of another) on their 10 inch pan pizzas.

This oven-baked dish really saved the day for me. If not for this pizza, I wouldn't have written this article about our lunch at Volante but hey, I guess with this, they can do a better job on their other dishes, and not just with their Pizza.

Will I go back to Volante the next time I visit Baguio City? Probably yes! Will i order steak again, maybe I'll pass on the steak. But Pizza? Definitely! They still have a lot of pizzas for me to try which really gave me a hard time what to choose - Sardines and Mushroom Pizza, Chili con Carne Pizza, and Pizza Putanesca to name some of their works of art.

Asiong's of Cavite

Asiong's of Cavite in Silang

Nestled in the upland Cavite town of Silang, Asiong delights its guests not just with the delectable tastes of their menu items, but with it's aesthetic beauty that fuses nature and the old world. Just as you arrive, the sight of lush greenery will instantly relax you and gives it a distinct ambiance that only nature could provide.

In Celebration of my father's 65th Birthday, he took me and my brother Wilson to Tagaytay City for breakfast and that's when we decided to have it as Asiong's. A few kilometres away from the bypass road from the city, we reached outskirts of Silang where these greens and memories are planted.

We arrived early in the morning, at around past 9 and we were greeted by Mr. Sonny Trias Lua, owner of Asiong in Silang, Cavite. He is the second generation of the Lua's who nurtured Cavite City with their famous dishes through the original Asiong's Carinderia. Like us, he is a decendant from generations of Chinese families, just like ourselves. I can still remember during my elementary days when my aunt Mama Vicky brought me to the original Asiong's in Cavite City where I ordered Lechon Kawali, it was the best I ever had right next to the one I had in Macau.

Just when we arrived and my father started walking inside, Sonny greeted us pleasantly and asked "Drove all the way from Malabon?". You can really recognise his Chinese roots (compared to us). We were very early and that was a really good thing as per Sonny, because they have a lot of reservations in the afternoon especially that it was a Saturday which is a weekend where they are usually packed. Sonny and my dad started to chat and it amazes me as they talked about people they both know of, mutual friends and family, that are intertwined by today's time and theirs.

NOTE: Sonny suggested that if you wish to dine with them on weekends, it is best to make a reservation since they serve a lot of guests during Saturdays and Sundays. You can call them in advance using the contact information I have provided at the end of this article.

I was then led by Mr. Sonny to the back of the restaurant where they have this Al Fresco dining spots which also houses their Herb Garden. While I was there, Sonny showed me all of the herbs that they are growing that are actually used for their dishes. It's amazing! It's like I was watching a Martha Stewart show as he cuts herbs, including those that will be used for our Garden Salad - Lettuce, Gotu Kola, Ashitaba, and more.

Sonny was also very kind to let me taste the Stevia's that he grew at the garden. Stevia is a natural sweetener and I've seen commercial packets of it being sold but I have never tasted a real one before. He plucked a few sprouts and handed them to me. I chewed on them and at first it was a little bitter but chewing further just bursts out a lot of sweetness! He also crushed some tarragon and lemon balm for us to smell and it was so fragrant and fresh. I stayed away from the Javanero Peppers because Sonny might pick one and ask me to tastes some of its fruits. Haha! Just kidding Sir Sonny!

The photo above shows the spot with the Bamboo shades, that's a beautiful spot! I can imagine Queen Elizabeth just below the shrubs, enjoying her cup of afternoon tea. It was so peaceful and serene. I think the garden is also perfect for upcoming events such as weddings and posh birthday brunches to be held at.

Oh the fresh mountain air just soothes my tired body that morning. Right after work (I work on graveyard shifts), I just took a shower and then we went straight to Tagaytay. But the fresh air and the beauty of the place just took all of my weariness away for quite a time.

Produce are also sold at a spot on the restaurant called the "County Store" including delicious goodies and pasalubongs for home. Famous Cavite delicacies such as the Jacobina biscuits of Mendez, Highland Coffee, and even their own healthy options such as Kale chips and Onion Chips can be bought. The sauce that they use for their pasta con huevos de pescao are also sold on jars so you can enjoy their specialties at the comforts of home.

Asiong's of Cavite - Silang, Metro Tagaytay

Then it was time for our food! It was presented and plated just perfectly and right there and then when the first dish was served, one of my favorite smells in the world made it's entrance - Cheese! (I love the smell of cheese ON MY FOOD OKAY? Not on any other thing, thank you very much) It was so tempting to just grab a bite from the plate but yes, we usually wait for all of the dishes first just as we are used to. I know salads are starters and can be killed right at that moment but we treat delicious and good looking salads like this one as main courses HAHA

Fresh Garden Salad with Quesillo Dressing

The smell of this dish is just enticingly fragrant. The strong smell of the Quesillo dressing makes anyone just grab their forks in an instant. The tomatoes are sweet and the fresh herbs that we gathered earlier at the garden are perfect. The croutons, at first, appears to be too toasted but its slight bitterness actually compliments the saltiness and all other flavors of the dish. Oh and before I forget, I have to commend the creaminess of their special Quesillo dressing that makes everything about it a lot smoother on the palate. I can eat like three plates of this one for sure.

Pasta Marinara with Meatballs

This was my order. I'm a self confessed killer of Pasta, in case you haven't heard or seen. And this one is good. What I really like about this one is the the sauce that was made really smooth with perfect explosions of fresh herbs that were used to concoct it. I know it's a matter of preference, but I really like sauces on my pasta smooth without any trace of chunky and oversized onion slices or giant squares of peppers, that's why this one is a match made for me. The sweetness of the basil and the strength of oregano, everything falls in its perfect place. 

Let's not forget another important component to this dish - the meatballs. One thing that puzzled me if these meatballs are baked or fried, but either way, they do taste good. Aside from the taste, they managed to maintain the juiciness of the meat inside while making the outer shell crispy, which gives it an opposing body to the smoothness of the sauce and the noodles.

Pasta con Huevos de Pescao

This one is my Brother Wilson's choice. Can you agree with me that this dish was plated so perfectly? IT'S SO CUTE! I was actually looking away when my brother started mixing it because it's like a cute birthday cake that you just don't want to cut because it will ruin the dedication icing on top. My brother was so kind to let me have a taste.  This dish is very rich and I think if this is consumed by large quantities, it will leave you feeling uneasy. But of course, if consumed with this serving, it's perfect!

The richness of fish roe, Tuna to be exact as I asked Sonny, is the star of this dish. There's this hidden sweetness in the saltiness of the roe. Crazy but that sweetness under saltiness does exist, well for me I guess. You would have to mix it very well before you grab a forkful so that you can enjoy the perfect amounts of everything- roe, sauce, herbs - and it will definitely be a delight to your tastebuds! Aside from this preparation, they also serve this dish in spicy and in negra or with black squid ink.

Right after, we then said our goodbyes to Sonny and pushed all the way home. It was a great dining experience and something memorable as we celebrate my father's 65th year. That's also where I gave my father his birthday gift, a round trip ticket to Taiwan this October! I'm so excited for his trip (yes, i'm not joining huhuhu) and as he roll the streets of taipei, I'm very sure he'll remember when we had our delicious brunch at Asiong's.
